Farmers across Palestine harvest their olives in small batches and bring them to press from the beginning of the olive harvest in October through the end in December. Each batch carries its own distinctive flavor and when combined create a special blend for the season that becomes their family’s signature olive oil. By honoring this age-old tradition by collecting olive oil from the spicy bite of the early harvest to the mild finish toward the end of the harvest, this signature blend hosts a diverse range of flavors that adds distinction to any salad, spread, or special meal.
